Yellow Rice

  • 2 c. uncooked rice

  • 1/4 c. oil

  • 1 med. onion, cut in 1/2 lengthwise and then sliced

  • 1 or 2 carrots, thinly sliced

  • 1 clove garlic minced

  • 4 c. water or a combination of water and broth from Worthington FriChik or chicken broth

  • 1 c. chopped Worthington Frichick

  • 2 heaping tbsp. McKay's chicken style seasoning

  • Turmeric to add color and a little flavor

  • Salt to taste

 

Directions

 

Brown rice in oil over medium heat until it is no longer translucent. Add carrots. Saute 2 minutes. Add onions saute 2 more minutes. Add garlic, saute only long enough to mix in with rice and vegetable mixture as it will burn easily. Add water or broth, Frichick, chicken seasoning. Add a little salt if the chicken style seasoning isn't salty enough. Add enough turmeric to obtain a little yellow color. Cover, reduce heat to low. Cook about 20 minutes without stirring. After 20 minutes open cover and stir. Cook longer if necessary.
